Even though I don’t work during the summers (and have a lot of time on my hands), I’m still all about meals that are quick and easy. One thing that really comes in handy is bacon and I’ve discovered (thanks, Pinterest!) one trick that has made meals come together in a really yummy way.
Once a week I set the oven to 400, line a baking sheet with foil (you could also use parchment paper), take an entire pack of bacon and lay it out in strips (similar to above but never as neat), and bake it for 20 minutes. I prefer my bacon pretty crunchy so this is perfect timing, if you like a little more chewy bacon you’ll want around 14-15 mins.
The bacon comes out of the oven and onto a couple layers of paper towels to soak up the grease. Clean-up is a cinch as the foil just goes into the trash and your stove and range aren’t covered in splatters!
Then just crumple the bacon in a sandwich baggie, throw it in the fridge and have it ready for whatever mood strikes: any number of summery salads, scrambled eggs, pasta carbonara, BLTs, or a quick crunchy bite when you need a salty fix.
